How gustar works
Gustar does not work like "to like". It works like "to please": the thing you like is the subject, and the person who likes it is the indirect object.
- Me gusta el café. — I like coffee. (literally: Coffee pleases me.)
- Me gustan los perros. — I like dogs. (literally: Dogs please me.)
So the verb agrees with the thing, not with the person. In the present you almost always need only two forms:

- Me gusta bailar. — I like dancing.
- Me gusta cocinar y leer. — I like cooking and reading.

A noun usually takes the definite article after gustar: Me gusta el chocolate (chocolate in general).
Adding a mí, a ti, a Juan
To add emphasis, contrast or clarity, put a + pronoun or name before the verb. The short pronoun stays.

- A mí me gusta el fútbol, pero a mi mujer no le gusta. — I like football, but my wife doesn't.
- A Carlos le gustan las motos. — Carlos likes motorbikes.
- Me encanta el cine. ¿Y a ti? — I love cinema. And you?
- A mí también. / A mí no. — Me too. / I don't.

Encantar is already strong: don't add mucho.
Watch out as an English speaker
- The person is not the subject. ✗ Yo gusto el café. / ✓ Me gusta el café. (Yo gusto means "I am liked / people like me".)
- The verb agrees with the thing. ✗ Me gusta los libros. / ✓ Me gustan los libros. ✗ Nos gustamos la música. / ✓ Nos gusta la música.
- "A mí" never replaces "me". ✗ A mí gusta. / ✓ A mí me gusta. ✗ Mi hermano le gusta. / ✓ A mi hermano le gusta.
- Don't drop the article. ✗ Me gusta música. / ✓ Me gusta la música.
- "I really like" is not "me encanta mucho". Use ✓ Me gusta mucho or ✓ Me encanta.
Example dialogue
¿Te gusta este restaurante? — Do you like this restaurant?
Sí, me encanta. Me gustan mucho sus tapas. — Yes, I love it. I really like their tapas.
A mí también. Pero a mis hijos no les gusta el pescado. — Me too. But my children don't like fish.
¿Y qué les gusta? — And what do they like?
Les gustan las patatas fritas. — They like chips.
